Sometimes you just get a craving for a chocolatey, gooey candy bar. Something with lots of goodies in it, like caramel and nuts. Something that melts on your tongue and crunches lightly between your teeth.
But then you remember that you are on a keto diet and that such sweet treats are off limits. Unless, of course, you can make them low carb and sugar-free. Surprise! Because these delicious Snickers knock-offs are indeed keto friendly. And they offer all the same wonderful flavor, with a mere fraction of the carbs.
I love making my own healthier candy, like Sugar Free Keto Turtles and Keto Peanut Butter Cups. And now I can add Keto Snickers to that list. I originally planned to give some away but my husband and I liked them so much, we kept them all to ourselves!
Why this recipe works
These Keto Snickers have all the elements of the classic candy bars. The “nougat” is similar to Keto Peanut Butter Fudge, and comes together in a few minutes. Then you layer on some keto caramel sauce mixed with chopped salted peanuts. And of course, there is plenty of sugar-free chocolate holding it all together.
Preparing these Keto Snickers as cups rather than bars makes them a little easier to put together. The silicone cups help give the candy some shape and offer built-in portion control. Which is important when something is this tasty!
While these candy cups do take a while to make, most of that is inactive time, waiting for the layers to set. Once you’re finished, you have 16 delicious servings that you can store in the fridge or freezer for whenever the craving strikes.
And best of all, they have only 4.5g net carbs per serving!
Ingredient Notes
- Dark chocolate: I like to use Lily’s, but I know many readers prefer ChocZero. As long as it melts well, you can use your preferred brand.
- Cocoa butter: I always use a little cocoa butter to help the chocolate melt more smoothly and to thin it out a little. If you can’t access that, you can try using a little coconut oil, but it will be more melty at room temperature.
- Peanut butter: My preferred natural peanut butter is Santa Cruz, but any creamy brand works well. If yours has a lot of oil, make sure to mix it in thoroughly!
- Sweeteners: You will need a mix of sweeteners for this recipe, including powdered, allulose, and brown sugar replacement. Please see the Expert Tips section for more information.
- Heavy cream: You need heavy whipping cream or whipping cream for the caramel filling.
- Peanuts: Roasted salted peanuts give the best flavor for these keto cups.
- Kitchen Staples: Butter, vanilla extract.
Step by Step Directions
1. Melt the chocolate: In a heatproof bowl set over a pan of barely simmering water, combine the chopped chocolate and the cocoa butter. Stir frequently until melted and smooth, then remove from heat.
2. Add to cups: Spoon about one teaspoon of chocolate into the bottom of the silicone muffin liners and spread to the edges. Freeze 30 minutes. Reserve the remaining chocolate for the tops of the cups.
3. Prepare the peanut butter layer: In a microwave safe bowl, combine the peanut butter and butter. Melt on high in 30 second increments, stirring until smooth. Stir in the powdered sweetener and vanilla extract until smooth. Divide this mixture between the cups, spreading to the edges. Refrigerate while preparing the caramel layer.
4. Make the caramel sauce: In a medium saucepan over medium heat, combine the allulose and brown sugar replacement. Cook until the sweeteners have melted. Allow to come to a boil, then reduce the heat to medium low and cook until caramelized and amber, about 3 minutes. Remove from the heat and stir in the butter and the cream. The mixture will bubble vigorously; this is normal.
5. Add the peanuts: Return to medium low heat and cook until deep amber and thickened, another 2 minutes or so. Remove and stir in the vanilla and the peanuts. Let cool until thickened and syrupy, then spoon over the peanut butter layer, dividing evenly. Return to the fridge for another 20 minutes.
6. Add more chocolate: Rewarm the remaining chocolate gently until melted, then spoon over the cups and spread to the edges. Refrigerate until firm, about 10 to 15 minutes.
Expert Tips
These fun Keto Snickers Candy are easy to make but they do take a bit of time to assemble. Make sure to let every layer set properly before adding the next layer.
As noted above, cocoa butter is the ideal addition to help melt the chocolate more smoothly and thin it out a bit. You can’t always find it in every grocery store, although many wellness stores sell it. But you can easily purchase it online on Amazon. I like the cocoa butter that comes in easy-to-measure discs.
Placing the silicone cups into a muffin pan helps them hold their shape better as you add the various layers. But this recipe makes 16 so if you don’t have two muffin pans, you may need to do some free-form! Sweetener Options
As mentioned above, you will need several different sweeteners for this recipe. The peanut butter layer works best with a powdered sweetener, although it can be any kind as long as it dissolves well.
The caramel requires allulose (preferred) or xylitol (second choice) to stay gooey and not re-crystallize. I also like to add some brown sugar replacement for better flavor. I prefer to make my own but you can use Swerve Brown or another storebought brand.
Frequently Asked Questions
While there are some brands of keto candy and candy bars, I recommend making your own at home. I find that it tastes much better and the ingredients are cleaner.
