I am immensely proud of myself for perfecting this Keto White Chocolate Fudge recipe. As in “pat myself on the back, toot my own horn” kind of proud.
I approached this recipe with trepidation, very concerned that attempting to melt keto white chocolate with my sugar-free condensed milk would result in a gloppy mess. In fact, as I was stirring the mixture, I told my husband that we might be eating “gloppy mess” for dessert for a few days.
But my fears were unfounded, because this delectable white chocolate fudge turned out perfectly! Creamy and decadent, and with the right balance of sweetness and flavor.
And those beautiful red sugar free dried cranberries look so pretty against the white of the fudge! I’ve been eating a little piece every day with a happy heart.

If you love white chocolate, you need to try this recipe. As I mentioned, the biggest concern was that the mixture would become gloppy, as keto white chocolate can be tricky to work with. But it came out so much better than I dared to hope!
As long as you stir it constantly, the condensed milk and white chocolate combine quite well. The resulting fudge is incredibly smooth and creamy. And the tart cranberries and crunchy nuts give it wonderful flavor and texture.
You do need to make the condensed milk first, but that’s incredibly easy. And if you happen to already have some made (as I know many of you do!), you can just warm it gently in a pan.
This Keto White Chocolate Fudge lasts remarkably well in the fridge, too. I was able to store mine and enjoy a piece every day for over a week. And this wonderful sugar-free fudge has only 2g net carbs per serving!
Ingredients you need
- Sugar free condensed milk: You can’t purchase sugar free condensed milk; you need to make it yourself. It’s easy and worth it! Do this first, so you can let it cool before making the fudge.
- Sugar-free white chocolate chips: I made this with Lily’s white chocolate chips. I think ChocZero would also work but they contain different sweeteners so I can’t be entirely sure.
- Cocoa butter: Cocoa butter is solid at room temperature, which helps give this fudge the right consistency. It also helps the white chocolate melt more smoothly.

- Powdered sweetener: This dissolves more easily and will help the fudge set properly. I used Swerve Confectioners.
- Sugar free dried cranberries: I have a great recipe to make your own sugar free dried cranberries so add extra time to prepare them.
- Pistachios: You can also use pecans or hazelnuts. Make sure they are lightly roasted before adding to the recipe.
Step-by-step directions
- Pour the condensed milk into a medium saucepan over medium low heat. Stir until warm and very liquid but do not let it simmer. Reduce heat to low.
- Add the white chocolate chips and the cocoa butter. Stir constantly until melted and smooth. Remove from heat.
- Add the collagen powder and sweetener and stir until well combined. Then stir in the cranberries and pistachios.
- Pour the mixture into a 9×5 loaf pan lined with parchment or waxed paper that is lightly greased. Spread the fudge mixture evenly and refrigerate 4 hours or up to overnight.
- Remove the fudge by the edges of the paper and set on a cutting board. Use a large sharp knife to cut into 18 pieces.
Expert tips
Make sure you use low heat when melting the chocolate with the condensed milk. White chocolate is finicky, and keto white chocolate is even more so. So keep the heat low and stand right there, stirring constantly.
Once you add the additional sweetener and the collagen, whisk it vigorously until it’s well combined and smooth. It will take moment, but it will combine nicely.
Don’t skip lining the pan with parchment or waxed paper. This helps you remove the fudge easily and cut it into nice squares.
Because allulose keeps things softer, this fudge can take quite a while to set. Don’t rush the process! I found that it had perfect texture after being in the fridge overnight.
Feel free to play with the flavors. You could make white chocolate mint fudge or vanilla fudge. But this Keto White Chocolate Fudge with cranberries and pistachios is a perfect treat for the holidays.
